This medium-grained seasoning can be used either as a rub before cooking or used during cooking as a seasoning for meats, pork and poultry, vegetables, roasted or baked potatoes and much more. I spent time cooking in Louisiana and this is my version of Cajun seasoning. It has just a little bit of bayou "bite" to it. It's not hot, but like most things Cajun, its a blend of tart, lively and piquant. (3.2 ounce bottle.)
