This recipe is so good it says it makes six servings but I’ve seen 2nd and 3rd helpings of this, which is great, unless you’re the one late to dinner. Fortunately, it easy to make more. A great side dish for beef, poultry and pork. Makes 6 servings.
Ingredients:
3 - 4 Tbsp. vegetable oil
3/4 lb. gold potatoes
3/4 lb. red potatoes
1 small white or yellow onion
1 1/2 Tbsp. Chef Mark Alan’s Roasted Herb Seasoning Blend
Directions: Dice potatoes into 3/4 inch sized chunks. Peel and medium-size dice the onion. Add 3 Tbsp. oil in
a large frying pan and begin heating over medium-high heat. Add the diced potatoes and begin frying, turning occasionally. When the potatoes are 3/4 cooked, add the onions and seasoning blend (and more oil if needed) and continue to fry until vegetables are browned and tender. Remove from skillet and serve warm.
